The Perfect Pairing

JUMBO PRAWN CEVICHE SALAD
with chiogga beet puree

Serves 4

Ingredients
3/4 cup of Orange Juice
Juice  & Zest of 2 limes
8 Jumbo prawns (size 13/15), Poached in water till medium rare
4 oz of micro greens
2 grapefruit, peeled and segmented
1 box of heirloom toybox tomatoes (sliced lengthwise into 4)
1 english cucumber, diced in ¼ inch cubes
¼  cup Muscat wine vinegar
¾   cup of extra virgin olive oil
1 Peeled Chiogga beet, roasted in oven till cooked through
1 bunch of chives, thinly sliced
1 watermelon radish, thinly sliced on a bias
Salt & Pepper

For the Shrimp Ceviche
In a small bowl, place Orange Juice, lime juice, lime zest, a pinch of Salt & Pepper and mix. Add the poached shrimp and place in a refrigerator covered for at least 4 hours

For the dressing
In a mixing bowl, add the  chives, and Muscat vinegar. Slowly whisk in the Extra virgin olive oil to create an infusion dressing, salt & pepper to taste.

For the Beet Puree
Cut the Chiogga beet into six pieces, place in a blender with  ¼ cup of dressing…puree till smooth

Assemble the Salad
Place a tablespoon of the beet puree on a plate and spread. 
In a small bowl add tomato, grapefruit segments, and cucumbers and mix in the remaining dressing.  Using a 3 inch ring mold, place ¼ of this mixture in the mold and press…remove an excess dressing.  Place 2 marinated prawns on the side and garnish with microgreens and a watermelon radish

This past weekend’s Napa Truffle Festival took us to one of Napa’s newest winery settings in the Coombsville appellation in Napa – Shadybrook Estate at Rapp Ranch.

The Saturday afternoon luncheon was set on the beautiful expansive terrace of the stunning winery estate. Mother nature delivered a spectacular sunny warm day with gentle breezes and breathtaking views of the surrounding mountains and valley. Guests sipped the extraordinary wines of Shadybrook beautifully paired with the truffle lunch prepared by Michelin star Chef Gabriel Kreuther of Gabriel Kreuther Restaurant. Shadybrook Wins the Trifecta!

Earlier this year, we submitted our wines into the infamous San Francisco International Wine Competition.  Established in 1980, this long-standing competition sets the standard for professional wine judging across the globe on domestic and international wines.  This competition is the largest international wine competition in the United States.

Out of the 4,600 wines submitted, our 2013 Malbec was awarded the Double Gold Medal! Our Malbec was not the only winner, the 2013 Cabernet received the Gold Medal and our 2014 Platine Blanc received the Silver Medal.  We are elated and honored to be awarded this trifecta of medals and to be recognized as one of the world’s esteemed wine producers.

The SFIWC is considered to be one of the most influential wine competitions in the world and of all competitions, this is the one to win! A SFIWC medal has been established as a reliable indication of wine excellence and wines recognized as medal-worthy by our judges are universally understood to be among the very best. Competition judges are established wine-industry experts.  Medal winners are chosen through a rigorous judging process – a highly controlled operation held over four days of blind tastings. 

Congratulations to Rudy Zuidema, our esteemed winemaker, and the Shadybrook team for the well-deserved win on all three Shadybrook Estate Wines at the 2016 San Francisco International Wine Competition!
